Our dinner offers a tasting menu created from time to time by the Chef, comprising 4 courses at 100 € per person or in 6 courses at 140 € per person (drinks not included).
Chef Buillas’ cuisine is a concentrate of bold refinement of ancient mountain flavours revisited in a gourmet key, which maintains the spirit of times gone by and a surprising taste. Recipes that reinterpret the Valle d’Aosta tradition are products linked to the territory and come from small artisans and local breeders who share the same passion for their land. And, on request, delicious proposals for celiacs and vegans or to satisfy various dietary needs.
Our passion and experience in the culinary field mean that everything is taken care of in detail: This is why we change our menu every day, and everything is prepared on the spot, starting from the raw ingredients. Our cuisine is an organic gastronomic journey that marries the goodness of genuine and fresh products, coming for the most part from the small synergistic garden that we personally cultivate, where herbs, edible flowers, and vegetables coexist and enrich our dishes with original and creative flavours, which can only be found here.
To accompany a particular and innovative cuisine, you need the right wine: our ancient cellar contains more than 1,000 regional, national and international labels and biodynamic white wine produced in our vineyard. And to end the evening, a large selection of whiskey, cognac, Armagnac and brandies.
